Description

The masala loaf is a savory bread that incorporates a mixture of Indian spices and fresh herbs, resulting in a bread that’s rich in flavor and aroma. This loaf is typically made with a blend of whole wheat and all-purpose flour, providing a hearty texture and a wholesome bite. The inclusion of spices such as cumin, coriander, turmeric, and fresh herbs like cilantro gives the bread a distinctive and enticing flavor that is both warming and satisfying.
Ingredients:
Whole wheat flour
All-purpose flour
Warm water or milk
Active dry yeast
Sugar
Salt
Olive oil or vegetable oil
Cumin seeds
Coriander powder
Turmeric powder
Fresh cilantro, chopped
Green chilies, finely chopped (optional)
Ginger, minced (optional)
Garlic, minced (optional)
Preparation:
Prepare the Dough:
In a large mixing bowl, combine warm water or milk with sugar and active dry yeast. Let it sit for about 5-10 minutes until the mixture becomes frothy.
In a separate bowl, mix whole wheat flour, all-purpose flour, salt, cumin seeds, coriander powder, and turmeric powder.
Combine and Knead:
Add the dry ingredients to the yeast mixture. Mix until a rough dough forms.
Incorporate the chopped cilantro, green chilies, minced ginger, and garlic into the dough. Knead the dough on a lightly floured surface for about 10 minutes, or until it becomes smooth and elastic.
First Rise:
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
Shape the Loaf:
Punch down the dough to release the air. Turn it out onto a floured surface and shape it into a loaf.
Place the shaped dough into a greased loaf pan. Cover it and let it rise again for about 30-45 minutes, or until it has risen just above the rim of the pan.
Prepare for Baking:
Preheat your oven to 375°F (190°C).
Brush the top of the loaf with a little oil and optionally sprinkle additional cumin seeds or chopped cilantro on top for garnish.
Bake:
Bake the loaf in the preheated oven for about 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.
If the top of the loaf browns too quickly, you can cover it with aluminum foil halfway through baking.
Cool and Serve:
Remove the loaf from the oven and let it cool on a wire rack before slicing.
Masala loaf is a flavorful bread that adds a unique twist to traditional loaves. Its aromatic spices and fresh herbs make it a delightful accompaniment to a variety of dishes, perfect for those who enjoy the vibrant flavors of Indian cuisine.
