Ingredients:
For the Potato Vada:
Potatoes, boiled and mashed
Green chilies, finely chopped
Ginger, minced
Garlic, minced
Fresh coriander leaves, chopped
Mustard seeds
Curry leaves
Turmeric powder
Salt
Gram flour (besan)
Water
Oil for frying
For the Pav:
Pav buns (small dinner rolls or slider buns)
Butter
For the Chutneys:
Green chutney (coriander and mint)
Tamarind chutney
Dry garlic chutney

Preparation:
Prepare the Potato Vada:
Heat a tablespoon of oil in a pan and add mustard seeds. Once they splutter, add curry leaves, chopped green chilies, ginger, and garlic. Sauté until fragrant.
Add turmeric powder and mashed potatoes. Mix well and cook for a few minutes. Add salt and chopped coriander leaves. Mix thoroughly and let it cool.
Once cool, shape the potato mixture into small balls or patties.
Prepare the Batter:
In a bowl, mix gram flour (besan) with water to form a smooth, thick batter. Add a pinch of turmeric and salt.
Fry the Potato Vada:
Heat oil in a deep frying pan.
Dip each potato ball or patty into the batter, ensuring it is well-coated, and then carefully place it into the hot oil.
